1 cup water
1 whole lemon peel, finely diced
1/2 cup sugar ( will try it with agave nectar next time)
1/2 cup lemon juice
1 cup sparkling mineral water
1 In saucepan, stir together diced lemon peel, plain water and sugar. Bring to a boil , then reduce to medium simmer for 5 minutes. Remove from heat and cool.
2. In a pitcher or a bowl, stir together the cooled lemon syrup with the peel with the lemon juice and mineral water and basil.
or freeze into ice cream maker and make sorbet instead.
