try this….Basil Lemon Ice Pops

I made these the other night… pretty tasty, tangy and tart. 

basil lemon ice pops or sorbet

servings 4


1 cup water

1 whole lemon peel, finely diced

1/2 cup sugar ( will try it with agave nectar next time)

1/2 cup lemon juice

1 cup sparkling mineral water

2 tbl basil, minced


1 In saucepan, stir together diced lemon peel, plain water and sugar. Bring to a boil , then reduce to medium simmer for 5 minutes. Remove from heat and cool.

2. In a pitcher or a bowl, stir together the cooled lemon syrup with the peel with the lemon juice and mineral water and basil.

3. From this point you can either pour into popsicle molds and freeze ,

   or freeze into ice cream maker and make sorbet instead.
